Apple Crisp
Nothing screams fall to me like a warm slice of apple pie topped with vanilla ice cream. So of course when it came to planning the Thanksgiving menu, I knew I would have to whip up something apple related. I’m one of those weirdos who doesn’t like pumpkin pie, so I wanted to make something that still had a hearty Thanksgiving vibe, but would satisfy all the pumpkin pie lovers too. And maybe question their love of pumpkin pie?
While the ingredients are pretty simple, once cooked this dessert has layers of delicious perfectly baked apples, topped with the most decadent crumble ever. Top it all of with a big scoop of ice cream and thank me later.
ingredients:
3-4 Granny Smith Apples
2-3 Fuji Apples
1 tablespoon ground cinnamon
1 1/4 cups unsalted butter
1 cup brown sugar
3/4 cup old fashion oats
1 cup all purpose flour
Vanilla ice cream to serve (extra points if it's homemade)
directions:
Preheat oven to 350 degrees.
Peel, core, and quarter the apples. Use a mandoline to slice apple quarters into paper thin slices. Arrange slices in a fan and sprinkle with cinnamon. Continue layering apple slices and cinnamon in even layers.
Pop the butter in the microwave for about 30 seconds to soften, then use a fork to combine the butter, brown sugar, oats and flour and sprinkle on top of the apples.
Bake for 55-60 minutes until the top is golden brown.
Serve with ice cream.
